Byrek me Qumësht is a traditional Albanian dessert-pie made with thin phyllo pastry layers soaked in a sweet milk custard. It is simple, comforting, and commonly prepared in Albanian homes, especially in rural areas and during family gatherings.
Prepare the baking dish
Grease a medium baking tray with oil or butter. Preheat the oven to 180°C (356°F).
Layer the phyllo
Place half of the phyllo sheets into the tray, lightly brushing every 2–3 layers with oil or melted butter. Let the edges hang slightly outside the tray.
Prepare the milk mixture
In a large bowl, whisk the eggs with sugar and salt until combined.
Gradually add the milk and vanilla extract, mixing gently.
Assemble the pie
Fold the hanging phyllo edges inward and place the remaining phyllo sheets on top, brushing lightly with oil.
Add the milk custard
Slowly pour the milk mixture evenly over the entire pie. Allow it to rest for 5–10 minutes so the phyllo absorbs the liquid.
